Pumpkin Spice Cookies with Cream Cheese Frosting!

Fall is quickly approaching, so you know its time for pumpkin spice and all things nice! It's truly my favorite time of the year, and I also love baking, so this is the perfect recipe! I found this recipe on Pinterest and modified it just a little bit. I hope you enjoy them as much as I did!

Cookies
Parchment Paper
  • 2 and 1/2 cups self-rising flour
  • 2 teaspoons ground cinnamon
  • 1 and 1/2 teaspoons pumpkin pie spice
  • 3/4 cup granulated white sugar
  • 3/4 cup light brown sugar, lightly packed
  • 1/2 cup (8 tablespoons) unsatled butter softened, do NOT melt
  • 1 CUP (not an entire can!) canned pumpkin, do not use pumpkin pie filling
  • 1 large egg
  • 1 teaspoon vanilla extract
Cream Cheese Frosting
  • 4 ounces full-fat cream cheese, softened NOT melted
  • 4 tablespoons unsalted butter, softened, NOT melted
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: pumpkin pie spice
Prepare a large sheet pan by lining with parchment paper. Preheat oven to 350 degrees F. In a large bowl, add flour, cinnamon, and pumpkin pie spice; Whisk to combine and set aside.




 Add 1 CUP pumpkin, the egg, and vanilla. Beat until the mixture is creamy.

 Add in the dry ingredients and mix until JUST combined. Avoid over-mixing as it will create denser cookies. 

Place heaping tablespoons of the batter on the baking sheet (I only bake 6 at a time) and flatten the balls of dough slightly.
Bake for 9-14 minutes, watching carefully, to avoid over-baking. They should be slightly under-baked and soft, but the tops shouldn't be shiny at all. Remove and allow to continue "baking" for another 2 minutes on the sheet pan before removing to a wire cooling rack to cool.
Beat the softened (not melted, should be at room temperature) cream cheese and butter until creamy (about 2 minutes) at medium-high speed.
Add the powdered sugar, salt, and vanilla. Beat until everything is combined and the frosting is soft and creamy. 

Now you're ready to frost the cookies! They are so delicious, and the perfect fall treat! ENJOY!!!

A trip to the Pioneer Woman's lodge & mercantile

To start off my Spring Break, my family went to Pawhuska, Oklahoma to visit the Pioneer Woman's lodge & mercantile. My Mom especially has watched her shows for a couple years and she has tried some of her recipes. We decided it would be fun to go tour where she films her cooking shows and stop at her mercantile for a little shopping and delicious food! When we first arrived to Pawhuska, we went to the mercantile. The line to eat was really long so we went upstairs to the bakery and grabbed some treats for a snack. They also have coffee and a candy bar! We each tried a different cupcake, and shared some knock you naked brownies. We also got some sticky buns to try for later. Then we went to the lodge.
